I found this post over at Deep Roots at Home. It’s a tweaked version of Pam O’Brien’s recipe for refrigerator jam at Thankful Expressions.
This is a recipe for a honey-sweetened, pectin-free refrigerator jam. You can use different combinations of fruit for the jam. For example you could mix blueberries, blackberries and raspberries, or you could pair blueberries and apples.
In addition to fruit and honey the recipe uses a natural superfood that acts as a binder and thickener.
The recipe itself is super simple which I love. After blending everything together, you just pour the blended fruit into glass jars with tight-fitting lids and refrigerate. This jam also freezes really well. Very nice recipe!
