It’s summer and blazingly hot outside.  Wouldn’t some homemade ice cream taste great right about now?  If I told you there was a homemade ice cream that you could make without an ice cream maker, used only two ingredients, and was super creamy, you’d probably say I’m nuts.  But it does exist and it’s delicious!

Sue of the View from Great Island shares her recipe for Dulce de Leche ice cream.  Sue explains what dulce de leche is. If you like caramel ice cream, you’ll love this recipe.   (Sue also  explains where to find dulce de leche in your supermarket or where to order it online).

It’s an insanely simple recipe to make and takes minutes for the prep.  You use the dulce de leche and one other ingredient.  Mix them together, put the mixture in a loaf pan and freeze.  Sue gives you all the details (and beautiful photographs), but it’s basically Mix – Freeze – Eat!  Be sure to read her tips at the end of the post.
