Cranberries are a superfood that have an antioxidant capacity that is second only to blueberries. Laurie of the Dan330 website explains the history of cranberries in the United States. She shares the various ways that Native Americans used cranberries and how they passed their knowledge on to fur traders from Europe.
For example, they shared how to make pemmikan which was really an energy bar made of powdered dried meat, fat and powdered dried fruit like cranberries and blueberries.
I think Laurie’s cranberry bread probably tastes 1000 times better than pemmican! This is an old family recipe that uses cranberries, fresh-squeezed orange juice, nuts, and other ingredients. She has some interesting baking tips for this bread too.
