I LOVE huckleberry jam! This is a creative recipe by Amy for Huckleberry Pinot Noir preserves. She uses Pomona’s Pectin, which uses less sugar than other pectins. Also, the calcium water she mentions comes with the Pomona’s Pectin.
It’s a very nice recipe with clear directions and helpful photographs. They also provides a link that explains water bath canning.
