This is a recipe by Cheryl of Cheryl’s Delights for Homemade Peppermint Pickles. It’s her variation on an older recipe for Cinnamon Pickles. It takes a little work to make them but they look really good!
Note:
This recipe calls for alum. Alum used to be used to increase the firmness of pickles. However, there is a debate about whether they help with quick process pickles. While alum seems to work better with fermented pickles, some sites no longer recommend it for fermented pickles either. There are also some health concerns about using alum.
I think this recipe would be just as fantastic without the alum!
