You can use raw almonds or roasted almonds. If you decide to roast the nuts make sure you don’t over-roast them. Heather roasts nuts at a higher temperature so they are done more quickly. I like to slow roast my almonds. Roasting at 170 degrees for 40 minutes and stirring halfway through works well for me.
Be creative with your nut butters! You can use a variety of different nuts in your recipe. Almonds, cashews, hazelnuts, macadamias, pecans, pistachios, and walnuts all work well. You can also use a mixture of nuts like almonds and cashews, almonds and pecans.
Note: Heather has an 800 watt food processor which allows her to process her nut butters more quickly. If you have a smaller processor, blend the nuts and rest the food processor every 10 to 15 minutes.
